The meatballs were a hit! I may or may not have added three times as much garlic and twice the seasonings...

Tonight we're having Basque Chicken and risotto with truffle oil.


*I'm going to change up the basque chicken as we don't have much for tomatoes but do have broth and tomato paste...

Pepper Jack cheese is the nastiest stuff in the world, after goat cheese.

 I would rather eat liver or eggplant.

I'll take that as a "no-thank-you" to the invites I was about to send out for my goat and pepper-jack cheese tasting luncheon.With eggplant parmigiana and foie gras even.  *sigh*

If you have any truffle fois gras I will be there with bells on. I have never had fois gras, but that reference in the first post to the truffle version has my interest piqued!

In honor of Lundi Gras, I tried a new recipe of Andouille Sausage Stew over brown rice. It was pretty good, although I think the spice needs to be amped up a bit next time.
 
BTW, Feta and Pepper Jack cheeses ROCK!

For our Mardi Gras meal: ham, baked potatoes, and asparagus- with the last two items floating in butter. We couldn't find any paczki, so dessert is Girl Scout cookies... the caramel thingys and the mint ones.

I've been meaning to post this since I made it last week. I found rotisserie chickens on sale at my local grocer last Wednesday (late in the day). I don't usually buy these, but the price was so good, I picked up a couple of them and refrigerated them immediately. Next day, I put 3 cans of chicken broth, plus one can water into a big pot, pulled all the chicken off the bones and set it aside. Then I put all the "garbage"...skin, bones, jelly, juice, even the string tying it up (!) into the broth and simmered it for about 20 minutes. I then strained it, having gotten out all the nice flavors from the throw-away material, and tossed it out. Added the chicken, simmered another 10 minutes, thickened it up a bit, then made dumplings (don't tell Kathy, I used Bisquick!) and it was quite tasty! Pretty quick, pretty easy!
