Pepper Jack cheese is the nastiest stuff in the world, after goat cheese.

Reply with quote | #414 | In honor of Lundi Gras, I tried a new recipe of Andouille Sausage Stew over brown rice. It was pretty good, although I think the spice needs to be amped up a bit next time. BTW, Feta and Pepper Jack cheeses ROCK!  __________________ ~Clare

Reply with quote | #419 | I've been meaning to post this since I made it last week. I found rotisserie chickens on sale at my local grocer last Wednesday (late in the day). I don't usually buy these, but the price was so good, I picked up a couple of them and refrigerated them immediately. Next day, I put 3 cans of chicken broth, plus one can water into a big pot, pulled all the chicken off the bones and set it aside. Then I put all the "garbage"...skin, bones, jelly, juice, even the string tying it up (!) into the broth and simmered it for about 20 minutes. I then strained it, having gotten out all the nice flavors from the throw-away material, and tossed it out. Added the chicken, simmered another 10 minutes, thickened it up a bit, then made dumplings (don't tell Kathy, I used Bisquick!) and it was quite tasty!
